Pinot Noir is a fantastic variety if you can get it to behave, both in the vineyard and at the winery. The grapes were de-stemmed without crushing and left to ferment for 20 days. After pressing, the wine was matured in old French oak for 10 months. The wine is perfect to serve at any time you think a Pinot Noir is required.
